Baked Feta Appetizer – Italian Centre Shop

Ingredients: 

½ cup extra-virgin olive oil, divided 

200g block feta cheese (macedonian-style or regular) 

1 cup pitted olives 

½ cup roughly chopped sundried tomatoes, drained from their oil 

2 tbsp capers, drained from their oil 

4x cloves garlic, thinly sliced 

2 tbsp fresh chopped parsley plus more for garnish 

2 tbsp fresh chopped basil plus more for garnish 

1 tsp fresh minced rosemary 

Crackers or bread for serving 

Instructions: 

  1. Preheat the oven to 375.
  2. To an oven-proof baking dish add ¼ cup olive oil to the dish. Add the creamy feta cheese in the center of the dish.  
  3. Surround the feta cheese with the pitted olives, sundried tomatoes, capers, thinly sliced garlic, fresh chopped parsley, fresh chopped basil and fresh minced rosemary. Pour ¼ cup of olive oil around on top of the feta. Use a small spoon to toss the ingredients together around the feta. 
  4. Bake for 18-22 minutes or until the feta has softened. 
  5. Garnish with fresh chopped parsley and fresh chopped basil.
  6. Serve with crackers or baguette. 

TIPS

  • If you don’t like sundried tomatoes, substitute with fresh baby tomatoes!
