Ingredients:
½ cup extra-virgin olive oil, divided
200g block feta cheese (macedonian-style or regular)
1 cup pitted olives
½ cup roughly chopped sundried tomatoes, drained from their oil
2 tbsp capers, drained from their oil
4x cloves garlic, thinly sliced
2 tbsp fresh chopped parsley plus more for garnish
2 tbsp fresh chopped basil plus more for garnish
1 tsp fresh minced rosemary
Crackers or bread for serving
Instructions:
- Preheat the oven to 375.
- To an oven-proof baking dish add ¼ cup olive oil to the dish. Add the creamy feta cheese in the center of the dish.
- Surround the feta cheese with the pitted olives, sundried tomatoes, capers, thinly sliced garlic, fresh chopped parsley, fresh chopped basil and fresh minced rosemary. Pour ¼ cup of olive oil around on top of the feta. Use a small spoon to toss the ingredients together around the feta.
- Bake for 18-22 minutes or until the feta has softened.
- Garnish with fresh chopped parsley and fresh chopped basil.
- Serve with crackers or baguette.
TIPS
- If you don’t like sundried tomatoes, substitute with fresh baby tomatoes!
