Ingredients:
1x package calabrese specialty small buns
450 grams lean ground beef
450 grams out of the casing Massimo’s Italian Sausage
Avocado oil for the grill
Topping Options:
6x slices italian provolone cheese
6x slices asiago cheese
6x slices cheddar cheese
1 head butter leaf lettuce
6x slices pancetta, cooked
1-2x hothouse tomato, sliced
Fresh arugula
Sauerkraut
Basil Pesto
Mayonnaise
Dijon Mustard
Piquillo Peppers
Instructions:
- Prepare all of your toppings and set aside on plates or platters.
- Heat up your grill to medium-high heat (about 425-450F). While the grill is heating up, make your burger patties by combining the lean ground beef and sausage out of the casing into a bowl and mix together to combine. Use ⅓ cup to scoop / measure each burger and use your hands to form into about 3 inch-wide patties.
- This will yield about 10-12 burger patties
- Press your thumb into the centre of each patty to make an indent; this helps to keep their shape while grilling.
- Bring out the buns and cheese to the grill as well (if using).
- Brush a drizzle of avocado oil on one side of the burgers (the side that will go down on the grill first) and grill the burgers for 5 minutes on one side. Then flip the burger and grill for another 5 minutes. Add a slice of cheese on each burger patty until cheese is melted and burgers are done, about another 2 minutes (internal temperature reaches 160ºF)
- Remove the burgers from the grill and set aside on a clean plate to rest while you toast the buns for 1-2 minutes.

- Sauerkraut, Mayo, Pancetta, Provolone
- Provolone, Pancetta, Pesto, Piquillo Peppers, Arugula or Lettuce
- Provolone, Dijon Mustard, Piquillo Peppers, Lettuce
- Pesto, Piquillo Peppers, Provolone or Asiago, Mayo, Arugula
- Dijon Mustard, Pancetta, Tomato, Asiago, Arugula
- Truffle Ketchup, Mayo, Cheddar, Lettuce
9. Serve with your choice of sides like chips or a simple arugula salad
