Ingredients

Kids Tortilla Roll-Up Bento Box:

2x small tortillas

2 tbsp cream cheese

1 cup spinach, loosely packed

4 slices roasted turkey

2 square slices cheddar cheese (from the deli)

12-16 slices of cucumber

2 cups mixed berries

2x granola bars

Adult Greek Salad Bento Box:

½ english cucumber, cut lengthwise and sliced into ¼ inch thick pieces

½ green pepper, cut into 1 inch pieces

1 cup cherry tomatoes, halved or quartered (depending on their size)

â…” cup cubes of feta cheese

â…“ cup thinly sliced red onion

â…“ cup pitted kalamata olives

12 roast turkey slices, rolled

â…” cup dill dip

8-12 mini pitas

Dressing

1 ½ tbsp extra virgin olive oil

1 ½ tbsp red wine vinegar

1/2 tsp oregano

1/4 tsp kosher salt

Pinch pepper

Instructions

Kids Tortilla Roll-Up Bento Box

  1. To prep the tortilla roll-ups, microwave each tortilla for 20 seconds (this helps with rolling the tortilla once filled with ingredients).
  2. Then spread 1 tbsp cream cheese on each tortilla, followed by layering spinach leaves on top of the cream cheese layer. Next, lay two slices of turkey on the spinach followed by a large square slice of cheddar cheese. Gently roll the tortilla to make one roll. Place in the fridge for 10-20 minutes before slicing.
  3. While the tortilla roll-up is chilling, use a rectangular container to assemble one bento box. To the lunch container add 1 cup of mixed berries, 6-8 slices of cucumber and 1 granola bar, cut into pieces. Repeat to create a second bento box lunch.
  4. Finally, remove the tortilla roll-ups from the fridge and cut into 4-6 rolls. Add 4-6 roll-ups to each bento box.
  5. Pack for lunch and enjoy!

 

Adult Greek Salad Bento Box:

  1. Make the greek salad: combine sliced cucumber, green pepper pieces, cherry tomatoes, feta cheese, thinly sliced red onion and pitted kalamata olives in a bowl. Then, mix up the dressing and toss with the salad. (If you don’t want to make your own dressing, use your favourite vinaigrette from the shop!
  2. Store the greek salad in the fridge until ready to use
  3. Use a rectangular container to assemble the bento box: to the container add ⅓ cup dill dip (in it’s own compartment or little container); roll 6 turkey slices and add to the lunch box; halve or quarter 4-6 mini pitas; and then add the greek salad, saving about half for another lunch.
  4. Repeat to create a second bento box lunch.

TIPS

  • If the tortilla roll-up isn’t staying together, use a toothpick to secure the edges.
  • Short on time? Use one of the Shop’s ready-made salads instead of the greek salad.
