Ingredients
6 oz. Soft goat cheese, room temperature

2-3 cloves garlic, peeled and minced
|
2 tbsp. Extra virgin olive oil
|
2 tbsp. Grated lemon zest
|
1 tbsp. Fresh lemon juice
|
12 slices prosciutto, halved crosswise
|
½ cup fig preserves
|
½ bunch arugula, trimmed
|
Freshly ground black pepper

Method

Mix goat cheese & garlic in small bowl. Set aside. Whisk oil, lemon zest & lemon juice in a small bowl. Set aside.

Spread thin layer of goat cheese/garlic mixture onto a slice of prosciutto. Add thin layer of fig preserve on top of the cheese.

Top with 1-2 arugula leaves. Drizzle with lemon vinaigrette. Season to taste with pepper. Roll prosciutto up around the filling.

Garnish with fresh herbs if desired.
