My favourite thing to cook with son Massimo, Breaded Chicken Breasts

One of the reasons I love to cook is so I can teach my son Massimo, 7. There’s lots of research to show that if kids know how to cook, they’ll eat well. Here’s one of his favourites.

1. When does a child get to beat things up? In this recipe. Massimo loves to soften the meat with a tenderiser. Then we arrange the beaten egg mix to the left and use our left ‘wet’ hand to dip the breast into the egg, coat it, then, still using the left hand, drop that into the breadcrumbs. We use our ‘dry’ right hand to toss the breast into the breadcrumbs which ensures an even covering and no eggy globs and very little mess. A good tip when cooking with the little ones.
   
   
2. No kids for this part, except watching. Add oil to a non-stick or cast iron pan. When bubbling add chicken breasts and cook both sides until golden.
   
   

Tip: 

Our favourite accompaniment is boiled peas tossed in the frying pan with pancetta pieces (Italian bacon) for flavour. Enjoy, Teresa and Massimo.
