Delicious Condiments You Can Make from the Garden that Compliment Grilled Meats

Do you have a ton of garden herbs or vegetables that you’re not sure how to enjoy them all? Well, here are a few quick ways to enjoy those delicious morsels with any of your favourite summer grilled meats.
- Traditional Chimichurri
Chimichurri is traditionally made from very finely chopped parsley and is a delicious topping to any grilled meat! So put that garden parsley to use with this simple recipe: ¾ cup finely chopped flat leaf parsley + ½ cup good quality olive oil + 2 tbsp red or white wine vinegar + 2-3 minced garlic cloves + coarse salt + pepper. Add in other seasonings too like oregano or red pepper flakes if you so desire. - Herby Condiment
Mix and match any number of garden herbs for this tasty herby dressing that is perfect for grilled steaks and chicken!
1/2 cup of finely chopped mixed herbs (oregano, parsley, thyme, rosemary)
1/2 cup high quality olive oil
2 garlic cloves, minced
Salt & pepper to taste
Optional: Steak juices

Quick Pickled Vegetables
Quick-pickling vegetables is another way to enjoy the bounty from your home garden. Try pickled vegetables on grilled chicken or steak tacos; as a side to italian sausages; or, on grilled steak sandwiches. The combinations are endless! Here’s a quick pickling recipe to try:
1 cup vegetables, sliced (try radishes, carrots, cucumbers or onions)
1 cup vinegar (distilled white or red wine vinegar, apple cider vinegar)
1 tbsp sugar
2 tsp salt
Mix vinegar mixture in a glass bowl or large glass container. Add vegetables. Stir or shake a few times and let sit for 1 hour, shaking a couple of times throughout the hour.
