Spezzatino di Pollo alle Olive
(Chicken Morsels with Olives)

Easter Italian dish, Wonderfully tender and juicy chicken thanks to the amazing free range organic chicken sold in the Italian Centre Shop, It is infused with lemon, white wine and beautifully pungent and earthy sun dried black olives. This recipe is simple yet packed with incredible vibrant and succulent flavors, the best part can be made in 30 minutes!
Ingredients 800 g organic free range chicken (breast and 2 thighs) 200g sun dried black olives 3 tbsp. extra virgin cold pressed olive oil 1 lemon zested & juiced 1/4 cup White Wine 1 clove garlic 1 tsp chopped fresh red chili pepper 2 tbsp. of finely chopped fennel tops Pinch dried dill 1/2 cup vegetable broth A small handful cut fresh red chili rounds for garnish Prep time: 15 minutes Cook time 15 minutes Total time: 30 minutes Servings: 4 |
