Grilled Cheese - Three Ways


We’ve got you covered with three grilled cheese versions: a three-cheese blend, to a fig and apple combination and something for those who like a little spice, you’ll be craving these all season long. There’s something for everyone’s taste! 


Ingredients:

Three Cheese Grilled Cheese

2 slices of pagnotta bread (makes 1 large sandwich, cut in half for 2)

2 tbsp butter at room temperature

½ cup shredded fontina cheese

½ cup shredded older cheddar cheese

½ cup shredded gruyere cheese


Green Apple, Fig & Cheddar Grilled Cheese

2 slices of pagnotta bread (makes 1 large sandwich, cut in half for 2)

½ granny smith apple, cut into thin slices

1 tbsp fig jam, divided

4 oz old cheddar, sliced


Pepperoni, Mozzarella & Hot Peppers Grilled Cheese

2 mini ciabatta rolls (makes 2 sandwiches)

1 tbsp Extra virgin olive oil

16 slices pepperoni, divided

1 ½ cups shredded mozzarella cheese

½ cup hot peppers, divided and placed on paper towels to remove excess moisture


Servings: 4 sandwiches

Preparation: 15 minutes

Total Time:  35 minutes

Kitchen Equipment: frying pan or sandwich maker




Three Cheese Grilled Cheese Method

    1. To assemble, butter one side of each of the pagnotta bread slices and place buttered-side down on a cutting board.
    2. Shred the cheese and leave ½ cup aside.
    3. Place 1 cup of shredded cheese on the bread and top with the remaining slice, buttered side up.
    4. Using a stovetop: heat a nonstick pan over medium heat for 3-4 minutes. Put the sandwich in the pan and cook for 3-5 minutes until well-browned. Flip and cook another 3-5 minutes until browned. While cooking, add in the ½ cup shredded cheese to the pan.
    5. Turn the sandwich once more and use a spatula to scrape the bubbling cheese from the pan onto the top of the sandwich.
    6. Remove from the pan and let cool for a few minutes. Cut in half and serve or cut into ‘fingers’ and serve with ketchup, especially great for kids!
    7. You can also use a sandwich maker to make this grilled cheese. Follow directions for assembly and cook similarly.

Green Apple, Fig & Old Cheddar Grilled Cheese Method

  1. To assemble, butter one side of each of the pagnotta bread slices and place buttered-side down on a cutting board.
  2. Spread the fig jam on one slice of bread, followed by the apple slices and cheese slices. Then top with the remaining bread slice.
  3. Using a stovetop: heat a nonstick pan over medium heat for 3-4 minutes. Put the sandwich in the pan and cook for 3-5 minutes until well-browned. Flip and cook another 3-5 minutes until browned. 
  4. Remove from the pan and let cool for a few minutes. Cut in half and serve.
  5. You can also use a sandwich maker to make this grilled cheese. Follow directions for assembly and cook similarly.



Pepperoni, Mozzarella & Hot Peppers Grilled Cheese Method

  1. To assemble, cut each ciabatta in half horizontally. Place the ciabatta rolls crust-side up on a cutting board and brush with olive oil.
  2. Turn each slice oil-side down on cutting board and divide mozzarella into 4 equal piles. Spread 2 piles of cheese on the bottom pieces of bread followed by 8 slices of pepperoni on each, ¼ cup of hot peppers on each and topped with remaining mozzarella cheese.
  3. Using a stovetop: heat a nonstick pan over medium heat for 3-4 minutes. Put the sandwich in the pan and cook for 5-7 minutes until well-browned. Flip and press each sandwich firmly with a spatula to compress the bread, cooking the second side for 5-6 minutes until well-browned. Flip the sandwich one more time, pressing firmly with a spatula and cooking 1 more minute.
  4. Remove from the pan and let cool for a few minutes. Cut in half and serve.
  5. You can also use a sandwich maker to make this grilled cheese. Follow directions for assembly and cook similarly.
