Leftover Turkey Cacciatore
Thanksgiving is over so here’s a super simple, super quick Italian-style way of turning leftovers into a scrumptious comfort meal. Works with chicken too.
Ingredients
Large red onion

2 cloves garlic
|
3 Tbs olive oil
|
2 x 1 Lb tinned roma tomatoes or fresh cherry tomatoés
|
1 Lb turkey leftovers
|
5 oz mozzarella balls
|
1 cup fresh breadcrumbs

Method

Fry onion and garlic in oil until caramelised. Add tomatoes, splash of balsamic, salt and pepper, oregano, then simmer on low for around 20 minutes or until really thick.

Stir in the Turkey and put the mixture into a baking dish.

Cover with torn up mozzarella and scattered breadcrumbs, more brown pepper.

Bake at 220C for about 20 minutes until top is bubbling and golden.

Serve with rice or salad.
