Our Favourite Pesto Formula

Pesto is a versatile and delicious sauce. We’re sharing our favourite recipe formula so you can make pesto at home, anytime, using your favourite combination of ingredients:
- Raw Nuts
⅓ cup of raw nuts or seeds - try pine nuts, walnuts or almonds or pumpkin or sunflower seeds. To enhance the flavours further, toast the nuts for 3-4 minutes on a low broil before using.
- Fresh herbs or greens (packed cups)
2 cups of packed greens or herbs. Basil is probably the most popular in terms of herbs but there are so many more options! Try parsley or cilantro or greens like kale, spinach, arugula or carrot top greens.
3 cloves garlic
- Grated hard cheese
Parmesan is probably the most widely used for pesto but you could try other cheeses like pecorino or manchego.
- Salt & Pepper
½ tsp salt is our go-to amount plus a few turns of ground pepper.
- Olive oil
Olive oil brings pesto all together!
Our best method for making pesto is: In a food processor or blender, add the herbs or greens, nuts or seeds and garlic and pulse until everything is chopped into small pieces. Add in the salt and pepper and stream in the olive oil while your food processor is running on low until everything is combined. (If you’re using a blender or can’t stream in the olive oil, simply add the olive oil and blend). Transfer the pesto to a bowl and stir in the grated cheese.
