Pancetta Crisps with Ricotta & Figs
Using just a few ingredients, these Pancetta Crisps are a combination of savoury and sweet when they are combined with creamy ricotta and sweet figs and honey. A few sprinkles of thyme brings all of the flavours together for the perfect appetizer bite!
12 thin slices of pancetta (about ¼ inch thick or less)
12 tbsp ricotta
1-2 tbsp of honey for drizzling
Sprigs of thyme
Preparation: 15 minutes
Total Time: 30 minutes

Using thinner slices of pancetta? Just use a bit less ricotta per pancetta crisp.
