Quick and Easy – Sundried Tomato & Breadcrumb Pasta
A traditional Sicilian dish made when money and time are tight. Such a simple dish to make. The breadcrumbs add a nice crunch to the soft pasta.
Bring your favourite pasta to the boil in salted water. Simmer until al dente.
Fry up 3 Tablespoons per person of leftover or Italian Centre Shop breadcrumbs in olive oil or pancetta fat until brown and crispy.
When the pasta is al dente, drain and return to the pan. Add three Tablespoons per person of sundried tomato paste and stir over the heat until the paste sticks to the pasta. Add crispy breadcrumbs and stir again. Finish off with chopped parsley or basil.
