Roasted Chestnut Pancetta Skewers

SERVINGS: 3. PREP. TIME 10 mins. COOK TIME. 33 mins. 

1. Cut each chestnut, making the slit on the top, just piercing the skin. You can get specialised chestnut cutters, but a small kitchen knife will do. 
   
   

2. Roast chestnuts in a pan coated with olive oil or on a BBQ for about 30 mins. 
   
   

3. Cool, peel and remove skin, keeping them whole. 
   
   

4. Place a rosemary sprig on top of the chestnut and wrap in a slice of pancetta. 
   
   

5. Skewer roasted chestnut & pancetta carefully to hold everything in place. 3 chestnuts per skewar. 
   
   

6. Add 2 Tbsp olive oil to a frying pan, cook just long enough to brown the pancetta. 
   

   
   
7. Serve hot, drizzled with honey.
