Ten Great Ways to Use Peppers
B.C. peppers are in! There’s no simpler, better way to elevate the flavour of these beauties, than by charring them on a barbecue, then tossing with extra virgin olive oil, garlic salt and pepper. Finally a dusting of fresh chopped parsley, and you have a wonderful side dish, condiment, or amazingly delicious in a Italian panino and more.
Ingredients
6 combination of purple, yellow and green B.C. peppers

3 garlic cloves |
3 tablespoons Extra Virgin Olive oil

Sea salt and cracked black pepper to taste

1 tbsp fresh chopped parsley.

Method
- Wash and dry peppers.
- Heat barbecue to 450 degrees F
- Place peppers on grill and cook till all sides have charred a bit, and have softened.
- Place peppers in a stainless steel bowl and cover with plastic wrap.
- When peppers have cooled a bit peel the charred skin off and clean out interior seeds.
- Slice peppers into ¼ inch slivers and place in a bowl.
- Add olive oil, garlic, salt, pepper.
- Sprinkle in fresh chopped parsley.
- Nice toss to distribute the oil and seasoning throughout.
- Ready to use.

Tip: If you don’t have a barbecue, another way to do the peppers is to put them on the top rack in the oven and grill. Place a baking sheet with water underneath. This enables the peppers to get charred and steamed at the same time and also keeps the drippings from falling into the bottom of the oven. Watch peppers carefully turning to ensure they get a char on all sides. Then follow the same steps as above. |
