Little Old Ladies

Tvecchierellehese honey fritters are tasty and sweet, making them a perfect ending to any meal. In the south of Italy, there are stories that say the names of these fritters came from the vecchiarelle–”little old ladies”–that made them in the town. With a hint of spice and almonds they have a delicious flavour that is perfect with espresso.


Ingredients


1/4 cup (125 mL) sugar, divided

1/4 cup (125 mL) warm water

1 Tbsp (15 mL) active dry yeast

1 3/4 cups (435 mL) all-purpose flour

1./3 cup toasted almonds, finely chopped

1/4 tsp (1 mL) ground cinnamon

Pinch of ground cloves.

4 cups (1 L) canola oil

1 cup (250 mL) liquid honey



Method


  1. Pit the dates, cut into four pieces each, and cover with water. Soaking them will make them easier to combine with the other ingredients. Set aside while you prepare the rest of the recipe.

  2. Meanwhile, in a large deep heavy saucepan or deep fryer, heat oil to 365°F (185°C). Fry fritters 4 or 5 at a time, turning over once, for about 2-4 minutes or until golden brown. Remove to a paper towel-lined baking sheet.

  3. In another large saucepan, heat honey over medium heat. Add half of the fritters and toss to coat them with honey. Scoop out with a slotted spoon onto a serving platter and repeat with remaining fritters.
